Mini Tortilla Bites

This healthy snack can be adapted to satisfy the whole family's taste buds- An easy way to get your kids involved in the kitchen!

Mini Tortilla Bites
1 bag Tostitos "scoops"
Lean Ground Turkey or Ground Beef
Fat Free Refried Beans
Reduced Fat Mexican 3 Cheese Blend
Optional ingredients:
Reduced Fat Sour Cream
Shredded Lettuce
Reduced Fat Guacamole 
Chives
Tomatoes
Black olives

-Place scoops on a cookie sheet
-Brown meat with one package Taco Seasoning and drain
-Put Beans, Meat, and any additional toppings you want in scoops. 
-Bake on 350 or until cheese is melted. 
-I add lettuce and tomatoe after removing from oven and garnish with a sprinkle of cheese. You can add or leave out toppings and have a variety of bites for the whole family!

Healthy 7 Layer Mexican Dip

-Combine Refried Beans, Black Beans, Scallions, Salsa, Cumin, Chili Powder, and JalapeƱos in a bowl.
-Transfer to 2 quart microwave safe dish and sprinkle with cheese.
-Microwave on high for 5 Minutes
-Remove and spread sour cream over mixture. Scatter Lettuce, Avocado and Olives (if using) on top. I also add a few chopped tomatoes.

Peanut Butter Energy Bites

Peanut Butter Energy Bites
-Great snack to curb your appetite or help with your sweet tooth! 

Ingredients:
1 Cup Oatmeal (Dry Old Fashioned Oats)
1/2 Cup Reduced Fat Peanut Butter or Almond Butter
1/2 Cup Ground Flax Seed
1/2 Cup Dark Chocolate Chips
2 Tablespoons Honey
2 Tablespoons Water
1 Teaspoon Vanilla Extract

Directions:
Mix all ingredients together in a bowl. (You may have to  use your hands!). Cover and chill in refrigerator for 10 minutes. Roll into bite size balls and seal in an air tight container. Will last up to 1 week in refrigerator! Add more honey or water if too dry!

Easy Low Carb Turkey Meatloaf

Easy Turkey Meatloaf the whole family will enjoy!

Turkey Meatloaf

1 lb Jenny O ground turkey breast
1 bell pepper- chopped    
1 onion- chopped
2 cloves of garlic- minced    
2 tbsp egg whites
1 1/2 tbsp Worcestershire sauce     
1 tbsp ketchup
1/2 cup of dry oats
SautƩ garlic, onion and bell pepper
Combine all ingredients in bowl and mix
Spray Pam in small glass casserole pan.
Spread out meatloaf mixture evenly. Spread 1 tbsp of ketchup evenly on top of meatloaf and top with great ground pepper

Bake 45 mins at 375 degrees

Kale Salad

Kale Salad-
Kale is on of the best super foods for your body. Make sure to steam kale donor is not bitter! 
Directions:
Pull leaves off stem of kale and steam for 2-3 minutes. Place i. Freezer to get cold.

Mix remaining ingredients to chopped kale. Serve dressing on the side will have plenty left over! Enjoy!! 

You can add Salmon, Chicken or Shrimp for more protein
